Vegetable Stir-Fry Recipe

Here’s a quick, easy, and healthy vegetable stir-fry recipe that can be made into a meal:

Prep Time: ~10 minutes
Cook Time: ~10 minutes

Ingredients:

* 3 tbsp olive oil
* 8 baby onions, halved
* 1 eggplant, cubed
* 8 ounces zucchini, sliced
* 8 ounces open-cap mushrooms (or 5-6 shiitake mushrooms), halved
* 2 gloves garlic, crushed
* 14 ounce can chopped tomatoes
* 2 tbsp sun-dried tomato paste
* ground black pepper
* fresh basil leaves

Preparation:

1. Start by heating the olive oil in a large preheated wok. (If you’re a vegetarian, a Wok is a must have!)
2. Add the baby onions and eggplant to the wok and stir-fry for about 5 minutes. The vegetables should start to soften.
3. Add the zucchini, mushrooms, garlic, tomatoes, and tomato paste to the wok and stir-fry for about 5 minutes. Reduce the heat and simmer for 10 minutes or until the vegetables are tender.
4. Season with the ground black pepper and garnish with fresh basil.

To turn this into a nice filling main meal, you can add bean curd or tofu!
